  • 300 g silken tofu
  • 25 g chickpea flour
  • 50 ml soy milk
  • 2 tbsp. malted yeast
  • 1 tbsp. cornstarch
  • 1 tsp. kala namak
  • 1 tsp garlic powder
  • 1 pinch turmeric
  • 1 pinch pepper
  • ½ tbsp. neutral oil

Let’s start cooking by following these step-by-step instructions:

  1. To prepare the omelette, combine all the ingredients except the oil in a blender. Blend until the mixture is smooth.
  2. In a non-stick frying pan, apply a light coating of oil and heat over medium heat. Once the pan is sufficiently heated, carefully pour in half the batter, spreading it thinly and evenly. Cover the pan and leave the omelette to cook for 3-5 minutes.
  3. Skilfully slide a spatula around the edges and under the omelette to loosen it, then carefully turn it over. Garnish one side of the omelette with the filling of your choice. Gently fold the other side over the filling, pressing lightly. Continue cooking for a further 2 minutes.
