For years, my go-to snack has been nuts, particularly almonds. I would buy them in bulk, and when I tired of almonds, I’d occasionally switch to walnuts or pecans. While nuts are an excellent choice, I believe that seeds are often overlooked. They are not only incredibly nutritious but also quite affordable. Pumpkin seeds and sunflower seeds are delicious on their own, especially when roasted with a touch of sea salt. They also make a wonderful addition to oatmeal, salads, and when you’re feeling a bit fancy, you can elevate your snacking game with this delightful seed brittle!

Preparing this super seed brittle is a breeze, and it can be stored in the freezer for weeks to come. Whip up a batch, and you’ll have healthy, grab-and-go snacks at your fingertips whenever you need them.

Super Seed Brittle

This seed brittle recipe combines pumpkin, chia, and sesame seeds. However, if you prefer sunflower or hemp seeds, they work equally well. Just make sure to use the same total volume of seeds.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup pumpkin seeds
  • 1/2 cup sesame seeds
  • 1/2 cup raisins
  • 1/2 cup shredded coconut
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil
  • 1/2 cup honey

Instructions

  • Preheat the oven to 325°F and line a rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine all the dry ingredients: chia seeds, pumpkin seeds, sesame seeds, raisins, shredded coconut, cinnamon, and sea salt. Mix thoroughly.
  • In a separate small bowl, blend all the wet ingredients: melted coconut oil, honey, and vanilla extract.
  • Gradually pour the wet ingredients into the dry mixture, stirring to ensure an even coating. The seed mixture should become sticky and start forming into a ball.
  • Transfer the seed mixture to the prepared baking sheet. Use your hands to evenly spread it out until it’s approximately 1/4″ thick. It should be sticky enough, but you may need to press it together slightly with your hands.
  • Place the baking sheet in the oven and bake for 20-25 minutes or until it turns golden, keeping a close eye to prevent burning.
  • Remove from the oven and allow it to cool completely before breaking it into pieces; it will still be soft when it comes out of the oven. Once cooled, break or cut it into pieces using a large knife. You can store the seed brittle in an airtight container for 2-3 days, or for extra crispiness, keep it in the freezer.
