Ingredients:

For the Bangers:

  • 8 pork sausages
  • 2 tablespoons extra virgin olive oil (1 tablespoon for sausages and 1 tablespoon for the gravy)

For the Mash:

  • 2 pounds potatoes, peeled and diced
  • 4 tablespoons butter
  • ½ cup milk
  • Salt and pepper to taste

For the Onion Gravy:

  • 2 large onions, thinly sliced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth or stock
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon sugar
  • 1 sprig fresh thyme (optional)
  • Salt and pepper to taste

  1. Heat a large skillet over medium heat with 1 tablespoon of olive oil. Add 8 pork sausages and cook, turning occasionally, until they are firm and golden brown (about 20 minutes). Set them aside and cover with foil to keep warm.
  2. While the sausages are cooking, place 2 pounds of peeled and diced potatoes in a pot of salted water and bring to a boil. Cook until tender, approximately 15-20 minutes.
  3. Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and ½ cup of milk, then mash until smooth. Season with salt and black pepper to taste.
  4. In another large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add 2 sliced onions and cook, stirring occasionally, for about 10 minutes or until they are softened and lightly browned.
  5. Sprinkle 2 tablespoons of flour over the onions and stir to coat. Cook for 1-2 minutes, stirring constantly.
  6. Slowly pour in 1 cup of beef broth, whisking constantly to avoid lumps. Add 1 teaspoon of balsamic vinegar and 1 teaspoon of sugar, then season with salt and black pepper to taste.
  7. Bring the gravy to a simmer and cook for 5-10 minutes, stirring occasionally, until it thickens.
  8. To serve, place a scoop of mashed potatoes on each plate, top with two sausages, and spoon the onion gravy over the top.
