  4. After draining the pasta, toss it with the cooked pancetta or bacon and the reserved grease. Pour the egg mixture over the pasta and add 1/2 cup of the reserved pasta water. Toss everything together for about 2 minutes, allowing the heat to cook the eggs and create a creamy sauce. If needed, add more of the reserved pasta water to achieve your desired sauce consistency.
  5. Serve the Spaghetti Carbonara hot, topped with the remaining grated pecorino romano cheese and freshly ground pepper.
